Last Minute Valentine's Day Treats: Almond Clusters

How can you make a quick treat on the day before the big day? Simply melt and temper some chocolate (dark, milk, white, your choice) and toss in a good quantity of roasted almonds. With a spoon or fork, scoop out 3 or 4 almonds and place in little clusters on a cookie sheet lined with waxed paper and immediately top with a dry roasted almond.

Chocolate Tips:

  • I used Belcolade 80% Uganda couverture chocolate and dry roasted, unsalted almonds for the clusters in the picture above.  However, salted roasted almonds and a semi-sweet (50-65%) or bittersweet (70%) dark chocolate would be a delicious combination.
  • For white chocolate, toss in a teaspoon of ground cinnamon or vanilla bean (dry ground beans, not liquid extract), and add some dried cherries to the mix also if you want to add a splash of red colour.
